I don’t make desserts. I don’t know how. But I do know how to make the yummiest Christmas cake ever! Panettone and pomegranates, what other heaven on earth could there be?
Step one – essential tools and basic ingredients – most importantly your mother’s, or possibly grandmother’s, excellent 300 year old beaters.
Step two – carefully slice the panettone. Eat some if you’re hungry.
Step three – squish it into a cake tin, and sprinkle liberally with Marsala
Step four – another essential piece of equipment – your mother’s 300 year old mixing bowl. First, eggs and sugar. Then cream and mascarpone. Yum yum yum.
Step five – mix.
Step six – keep mixing. Stop complaining about how your arms are aching. Your mother never did!
Step seven – add sugar coated nuts, other nuts that you like and dark choc chips. Remember, sugar coated nuts are good for you, but practice some self control! Mix well.
Step eight – add a generous layer of the yummy creamy nutty stuff, and top with another layer of panettone and Marsala. Repeat as many times as you like, with a final layer of panettone. Put in the fridge for awhile, maybe overnight if you can be patient.
Finally… add a top layer of the creamy stuff, and sprinkle liberally with nuts, choc chips, and most importantly, POMEGRANATE SEEDS! Yum! Admire this fabulous handiwork!
Add other healthy treats to the Christmas dessert selection, just for variety.
